Home-made ice cream is something I’ve been wanting to try my hand at for ages. Not having an ice cream maker has always put me off a little but the other day I decided to brave it and just give it a shot!
Wanting to go fruity, I made my ice cream with bananas which I froze first. Now, I feel a tad embarrassed that I’m even going to say this but if you want to try it… peel and chop the bananas before freezing. I must have been so overcome with excitement when I decided to make ice cream that I suffered from a severe mind blank because I just chucked three whole bananas in the freezer…
Yes, they were almost impossible to peel when removed from the freezer. Yes, I did have to run them under cold water to thaw a little. Yes, I did have to then put the diced pieces back in the freezer. And yes, I did nearly get frost-bitten fingers from the whole debacle!
Oops.
So after that top tip, here’s my recipe!
Vegan Banana & Coconut Ice Cream
Ingredients
3 medium over-ripe bananas, diced and frozen
400ml coconut milk
2 tbsp agave nectar
1 tsp vanilla extract
4 tbsp shredded coconut (optional; don’t add if you don’t like the texture)
Method
1. Add frozen banana pieces and coconut milk to blender and blend until smooth. Add remaining ingredients and blend until combined.
2. If you have an ice-cream maker (lucky you!) transfer mix to to machine and follow manufacturer’s instructions. If not, pour mix into airtight container and place in freezer. Whisk every 30-40 minutes until frozen to prevent mixture going icy.
Enjoy!
I ended up going to bed before my mix was entirely frozen, so it turned a little bit icy overnight. But when left out for a few minutes before serving it was fine and it tasted amazing topped with fresh banana.
I even added a sneaky spoonful to my breakfast smoothie this morning:
Smoothie = 2 small bananas, glass of soy milk, drizzle of agave nectar, few drops vanilla essence and spoonful of vegan ice-cream.

Thanks! 🙂 Well, my freezer isn’t the best so probably took a little longer than some. On average, it should take around 4-5 hours.
Plus, don’t forget to add the time of freezing the bananas beforehand – they freeze in a few hours WITHOUT the skin… 😉

Your post made me laugh. Thanks for sharing your tip on not freezing whole bananas. It sure makes sense now. Often you read instructions on WHAT to do, but WHY is just as important as WHAT.
I often find myself with over ripe bananas. I usually blend them with milk for a quick banana milk. Coconut banana ice cream sounds heavenly.

Banana smoothies or banana bread are usually my favourite ways to use up old bananas but this ice cream has made it’s way onto that list!
