In a large bowl, gently mix together flour, Purition blend, baking powder, cinnamon, and salt. In a separate, small bowl, whisk together water, milk, maple syrup and agave nectar.
Create well in dry ingredients and add wet ingredients. Stir until just combined (be careful not to overmix).
Spray medium frying pan with oil and warm over medium-high heat. Add pancake batter 1/4 cup at a time, cooking until bubbles appear in the batter. Flip pancake and cook until lightly browned, around one minute. Repeat with remaining batter, adding a spray or two of oil when pan gets too dry.
Serve stacked with drizzle of warm maple syrup and top with caramelised bananas.
