Vegan Pancakes

with Caramelised Bananas and Purition Coffee & Walnut Blend

Ingredients
  

  • 1 cup plain flour
  • 40 g Purition Coffee & Walnut vegan blend
  • 1 tbsp baking powder
  • 1/2 tsp ground cinnamon
  • 1/2 tsp salt
  • 1/2 cup water
  • 1/2 cup non-dairy milk
  • 3 tbsp maple syrup (plus extra for drizzling)
  • 1 tbsp agave nectar
  • 4-5 pumps plant-based cooking spray

Caramelised Bananas

  • 2-3 medium bananas, peeled & sliced (slightly overripe works best)
  • 2 tbsp light brown sugar
  • 4-5 pumps plant-based cooking spray

Instructions
 

  • In a large bowl, gently mix together flour, Purition blend, baking powder, cinnamon, and salt. In a separate, small bowl, whisk together water, milk, maple syrup and agave nectar.
  • Create well in dry ingredients and add wet ingredients. Stir until just combined (be careful not to overmix).
  • Spray medium frying pan with oil and warm over medium-high heat. Add pancake batter 1/4 cup at a time, cooking until bubbles appear in the batter. Flip pancake and cook until lightly browned, around one minute. Repeat with remaining batter, adding a spray or two of oil when pan gets too dry.
  • Serve stacked with drizzle of warm maple syrup and top with caramelised bananas.

Caramelised Bananas

  • Add sugar to medium bowl or plate and roll bananas through until well-coated.
  • Heat oil in small frying pan over medium-high hear. Add banana slices, sprinkle with remaining sugar and cook until soft and golden. Add a little more oil if needed.
