I love experimenting with recipes, so rather than stick with my go-to pancakes, I decided to try something a little different. I was recently sent some packs of Purition’s* vegan range to try out, which was perfect timing.

Purition BLENDS
The Purition vegan blends are a smoothie mix made from natural wholefoods like nuts and seeds. They’re high in protein, fibre, and healthy fats but low in sugar; perfect not just for smoothies but also porridge, smoothie bowls and baking. And vegan pancakes!
With their flavours coming from natural sources like vanilla pods, cocoa, and freeze-dried berries, the blends don’t have an artificial or overly-sweet taste. However, if you have a sweet tooth, just add some agave or other natural sweetener to your smoothie or recipe.
The flavours in the vegan range include everything from traditional Chocolate and Vanilla, to fruity flavours, and more unique blends like Beetroot & Chocolate and Coffee & Walnut. If you’re unsure which flavour to go with, the Discovery Box* is perfect as it contains smaller samples.
Vegan Pancakes
I decided the subtle sweetness of Coffee & Walnut would make the perfect addition to my vegan pancakes. They’re already sweet enough from the maple syrup, agave nectar and caramelised banana topping.
The pancakes turned out better than expected, to be honest! They were just the right sweetness, fluffy, and incredibly filling. In fact, I ended up saving half the batch for dinner that night…
Vegan Pancakes
Ingredients
- 1 cup plain flour
- 40 g Purition Coffee & Walnut vegan blend
- 1 tbsp baking powder
- 1/2 tsp ground cinnamon
- 1/2 tsp salt
- 1/2 cup water
- 1/2 cup non-dairy milk
- 3 tbsp maple syrup (plus extra for drizzling)
- 1 tbsp agave nectar
- 4-5 pumps plant-based cooking spray
Caramelised Bananas
- 2-3 medium bananas, peeled & sliced (slightly overripe works best)
- 2 tbsp light brown sugar
- 4-5 pumps plant-based cooking spray
Instructions
- In a large bowl, gently mix together flour, Purition blend, baking powder, cinnamon, and salt. In a separate, small bowl, whisk together water, milk, maple syrup and agave nectar.
- Create well in dry ingredients and add wet ingredients. Stir until just combined (be careful not to overmix).
- Spray medium frying pan with oil and warm over medium-high heat. Add pancake batter 1/4 cup at a time, cooking until bubbles appear in the batter. Flip pancake and cook until lightly browned, around one minute. Repeat with remaining batter, adding a spray or two of oil when pan gets too dry.
- Serve stacked with drizzle of warm maple syrup and top with caramelised bananas.
Caramelised Bananas
- Add sugar to medium bowl or plate and roll bananas through until well-coated.
- Heat oil in small frying pan over medium-high hear. Add banana slices, sprinkle with remaining sugar and cook until soft and golden. Add a little more oil if needed.

I never had a vegan pancake, but sound delicious. Especially thought of adding caramelised bananas makes me want to have some.

This has got to be the first vegan pancake recipe that used regular flour! I love that! I’ve tried the other types of flour but I’m not accustomed to them yet. Thanks for sharing this! Are bananas amazing or what??!!

These look really good! I’ve never heard of Purition. It’s good to have many options when looking for plant-based foods. I’m not a big pancake eater but I do love the smell of them 🙂
