Vegan Hazelnut and Chocolate Chip Cookies with Indigo Nutrition

Veganuary is over for another year. With over 250,000 signups (more than the last four years combined), 2019 was the most successful year for Veganuary yet. With more and more people dipping their toes into the waters of veganism, it’s always exciting to be able to share great new vegan products.

So, when the lovely folks at Indigo Nutrition sent me a box of their Raw Nut and Seed Butters to try out and create a recipe with, I was excited by the possibilities.

Indigo Nutrition Nut & Seed Butters

The Indigo Nutrition nut and seed butters are raw, so they retain far more essential vitamins and minerals than their mass-produced counterparts. They’re also certified organic and free from additives like salt, sugar and preservatives.

The butters are all really smooth so they’re amazing spread on crackers, sandwiches or toast (walnut butter and banana on toast? Yes, please.). They’re also perfect for mixing in smoothies or dolloping on top of smoothie bowls. Honestly, it was hard not to eat some of them straight from the jar!

My favourite was definitely the Hazelnut Butter (which is why I chose that one one to create a recipe with) but other top runners were the Apricot Kernel Butter and the Almond Butter.

Ranging from £5.99-£7.99 per 250g jar, they may be more expensive than your average nut butter but they are far higher in quality and much better for you so definitely worth it.

Now on to the recipe…

Vegan Hazelnut COOKIES wITH Chocolate ChipS

These butters practically screamed to be made into cookies. I love the flavours of hazelnut and chocolate together, so choc chip cookies it was!

As the hazelnut butter and cookie mix are sugar-free, they’re not overly sweet, which I really liked. However, if you have more of a sweet tooth, add more chocolate or increase the amount of agave nectar slightly.

I found they tasted even better the day after baking as they were slightly softer and I much prefer a chewy cookie. However, if you’re a fan of crunch, add a minute or two to the baking time; just make sure you watch the oven so the cookies don’t burn!

Vegan Hazelnut & Cookies with Chocolate Chips

Quick and easy choc chip cookies with nut butter.

Ingredients
  

  • 1 1/2 cups plain flour
  • 1/2 cup rolled oats
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup vegan chocolate chips
  • 250 g Indigo Herbs Organic Raw Hazelnut Butter
  • 1/4 cup coconut oil, melted to liquid
  • 1/4 cup agave nectar
  • 1/2 tsp baking soda
  • 3 tbsp boiling water

Instructions
 

  • Pre-heat oven to 180°C and line large baking tray with oil and baking paper.
  • Sift flour into large mixing bowl then stir in oats, salt, baking powder and chocolate chips.
  • In small bowl, mix Hazelnut Butter, oil and agave nectar. In separate bowl or mug, dissolve baking powder in boiling water (it should froth), then pour into wet ingredients and mix well.
  • In centre of dry mix, make a well and pour in wet mix. Stir until just combined – do not over-mix.
  • Roll mixture into balls, about a tablespoon in size and place on baking tray, at least 5cm apart. Using a fork, press down on each ball until slightly flattened.
  • Bake for 8-10 minutes, until biscuits are lightly browned. Remove from oven and cool on baking tray for 10 minutes before transferring to wire rack to cool completely.

  2. These look and sound absolutely mouth-watering, I absolutely love anything to do with nutty chocolate. This is just proof that vegan food can be super yummy too, if not better! The nut butters look amazing, I think I’d love the walnut and almond ones the most as they’re two of my favourite nuts. Do you deliver these cookies?! Haha 🙂

    1. Hope you like the recipe! I’ve not tried it with gluten-free flour. I don’t have much experience with it as I don’t need it myself but sure the recipe could be adapted. 🙂
