Raw Vegan Date Bars – Quick & Easy Snack Bars

One of my first ever posts on this blog was a review of Nākd bars by Natural Balance Foods. Since then, I have mentioned these raw vegan treats in quite a few posts! You could probably say that I love them. You may even say that I’m obsessed. They are my favourite work snack and since my review on them back in 2012, the range has exploded with tonnes of new flavours and products.

However, given that these little bars are not exactly the cheapest snack around and that they usually only contain between 3-5 ingredients, I decided to try my hand at making some myself. They don’t make the prettiest treats but they are pretty damn tasty!

Raw Vegan Date Bars

Makes 8 bars

Raw Vegan Date Bars

Ingredients

  • 1 cup dates, de-seeded and roughly chopped
  • 1 cup pecans, roughly chopped
  • 1 tablespoon pumpkin seeds

Method

1. Place all in ingredients in food processor (or powerful blender) and pulse until evenly mixed and mixture starts to stick together.

2. Remove mixture from food processor and firmly press into small rectangular tin or dish to about 3cm thick. Place in fridge overnight to set.

3. Remove from fridge and use a spatula to lift slab onto chopping board. Cut widthways into 3cm strips.

The date bars were a great success! They were soft and chewy and sweet and filling. And yes, they did taste like the Nākd Pecan Pie bar. (Or “better!” according to my resident taste tester.)

These date bars are so versatile. So versatile, in fact, that they don’t even have to be bars! You could chop them up into little bit-sized pieces, or roll them into little balls of energy, perhaps covered with coconut shreds. You could make the bars with any kind of nuts, or if you’re allergic to nuts, you could use just seeds or dried fruit with the dates instead. I added sunflower seeds to my bars just for a bit of extra texture and goodness and was happy with the result.

I am planning to buy dates a whole lot more often now and experiment with different flavour combinations. But I’m pretty sure that my obsession won’t die that easily and I’ll still be making a beeline for the Nākd stand at the next Vegfest…

    I love nakd bars, although I find a lot of them too sweet(?!) – am slightly addicted to the strawberry one right now though 🙂

      I am currently addicted to the Apple Pie flavour. The dates do make them quite sweet but then I like that I can satisfy my mid-morning sweet craving without reaching for a chocolate bar. 😉

  2. Oh excellent! I’m going to try this, with a bit of added raw cacao powder & some flaxseed. Is that just showing off though? 🙂

    1. Haha, definitely not! I nearly put chia seeds in this batch but chickened out. Now that I know just how simple (and tasty) these bars are, I’m going to mix up the recipe a bit next time and chuck some extra ingredients in. Let me know how your creation goes! 🙂

      1. The last few weeks, I’ve been liberally adding flax or chia to everything I can manage. They’re mighty big bags they come in so they can’t just go in porridge!
